Notes: Cultivated and harvested by the Sara Ate Cooperative’s 500 members, this coffee comes from the Takengon highlands where the Gayonese farmers maintain a traditional village lifestyle. The wet hulled process this coffee goes through is unique to Indonesia; the parchment is removed from the bean while the coffee is still high in moisture leaving the bean exposed during the drying period. This process gives the raw bean a distinct bluish hue.
